Scope of work
- Provide comprehensive daily meal services including breakfast, lunch, dinner, and two daily snacks for detainee populations
- Staff the kitchen seven days per week, 365 days per year, between 5:30 AM and 6:00 PM
- Provide a four-week cycle menu, sack lunch cycle, and five holiday and special meals
- Prepare and serve medical diet meals, liquid diets, and oral nutritional supplements as medically required
- Maintain emergency supplies and menus for five-day lockdown situations and two-week utility outages
- Provide thermal insulated compartmentalized trays, utensils, and flatware for inmate meal service
- Supply an ADA-certified dietitian to review and certify menus and conduct on-site service monitoring
- Procure, repair, maintain, or replace food service equipment as directed by the County

Minimum qualifications
- Extensive experience, knowledgeable background, and qualifications in institutional food service management
- ADA-certified dietitian with active certification and resume
- Trained Food Service Manager and Assistant Food Service Manager with experience in similar institutions
- Completion and passing of 5-year criminal background check, fingerprinting, physical exam, and drug testing for all staff
